Since 4th January i’ve been following the 30 day My Escape healthy eating plan. I feel like I’ve lost weight, i feel happier and healthier since all the over indulging at Christmas. The plan provides 30 days of daily meals, shopping lists and exercises to follow. Meals are all dairy free, gluten free, free of processed sugars, no meat and no alcohol. I’ve just finished my 4th week, I’ve been very committed only having the odd coffee and some chicken with a roast (it was the only option, honest)
The plan has really helped me to kick my cake and chocolate habit and get organised with my cooking, it’s great.

Indonesian curry(Serves 2)
½ red pepper
1 tin coconut milk
handful cashew nuts
½ bag mange tout
½ green beans
1 tsp turmeric
½ tbsp boullion
Thumb sized piece of ginger
2 garlic cloves
Saute the vegetables with the bouillion, turmeric, ginger and garlic. Pour in the coconut milk and mix in the chopped pineapple. Sprinkle over with toasted cashews and coriander to serve. Serve with brown rice.
